Does Sync allow syncing an Xsan volume to non-Xsan volume, specifically a direct attached HFS+ volume?

I am thinking of a scenario where an Xsan volume goes offline and I don't want my backup (sync'd vol) to go with the primary.

Yes it does.

We have just installed a sync/backup-system based on HFS+ formatted direct attached storage.

The PresSTORE server is an Xsan client and synchronizes two Xsans to one big HFS+ volume. The volume is case sensitive-formatted.

One of the Xsans goes to one folder on the DAS, and the other to a different folder. We also have a week of cycles within the same folders, so in case someone deletes data on the Xsan, we can still recover the data within a week.

If the Xsans go down, we can just reshare the folders from the DAS, and they will show up on the clients exactly as Volumes/Xsan...

In addition, we back up the DAS to a Tandberg T80+ for extra security.
